Haiii friends…
Today I am coming with a sponge cake recipe. Don’t have an oven? No issue. This cake can be made either in an oven or on your gas stove!!!!!! First I will explain the recipe and method for oven, and then about how you can cook this recipe in gas top.
I prefer baking either sponge cake or chiffon cake to butter cakes (health consideration!!!!). For those who are not aware of different types of cakes, I will soon post about different categories of cakes…
This is a simple sponge cake and by doing slight modifications you can make different cake varieties. Making this cake as a base cake and by altering fillings and frosting, you can make different varieties of cakes

Ingredients
- Eggs - 3(large) at room temperature
- Granulated sugar – 1/2 cup
- All-purpose flour – 1/2 cup
- Baking powder – 1/2 tsp
- Vanilla Essence – 1tsp
- A pinch of salt
Method:
Step 1 Preheat Oven to 350˚F. Line bottom of 6″ cake pan with parchment paper (do not grease the sides).
Step 2 In the bowl of an electric stand mixer fitted with whisk attachment beat 3 large eggs for 1 minute on high speed. With the mixer on, gradually add 1/2 cup sugar and continue beating 6-8 minutes until thick and fluffy. Add vanilla essence
Step 3 Whisk together 1/2 cup flour and 1/2 tsp baking powder and pinch of salt. Then sift this mixture into fluffy egg mixture one third at a time. Fold with a spatula with each addition just until incorporated. Scrape spatula from the bottom to catch any pockets of flour and stop mixing when no streaks of flour remain. Do not over-mix or you will deflate the batter.
Step 4 Pour it into the prepared cake pan. Bake at 350˚F for 25-30 minutes, or until top is golden brown. Remove from pan by sliding a thin spatula around the edges then transfer to a wire rack and remove parchment paper. Cool cakes to room temperature then slice layers equally in half with a serrated knife.
Now coming to gas stove version of this cake…
Ingredients and batter preparation is same as above. Instead of step1 and step4, follow this…
- Turn on your gas stove and switch the flame to the lowest possible (Yeah… I didn’t say that switch the flame to simmer, because in my gas stove I can achieve a flame lower than simmer point, somewhere nearer to off position (by turning the knob very slowly to off position)). Put a non stick pan (not a big one) and grease the bottom portion with oil or butter or ghee.
- Start preparing the batter as in step 2 and step 3 of above method.
- Pour the batter into the pan and close with the lid and allow to cook for 20-25 minutes.
- Then remove from the pan and allow to cool.
