Plum Cake

Hope you are all fine. Today I'm here with a cake recipe again...Plum Cake Recipe.
When thinking about Christmas, first thing came into my mind is plum cake.
Every December demands for minimum one plum cake😋😋
I came to UAE on 2011. From there on, we celebrated our Christmas with the plum cake bought from Lulu shops. But this year,I thought of giving a try to make it by myself and the outcome was good😌
So I made some more attempts to make it perfect and the recipe is as follows:





First we have to soak the dry fruits and nuts. Before soaking, cut the dry fruits and nuts into small pieces. Then soak it in wine or some juice. I took 2 cups of dry fruits and nuts in total and 1 small bottle of  apple juice for soaking. I kept it at room temperature for 1 day, then put it in the refrigerator for at least 1 week, covered with a cling film.


For preparing cake first caramelize the sugar. For that, heat a heavy bottom pan. Add 1/2 cup sugar and 1tbsp water to it. after some time sugar starts to melt and begins to change the color. When it becomes golden brown color, turn off the heat and immediately add 1/4 cup of boiling water to it. Then allow it to cool.





For preparing cake:
All purpose flour - 1.5 cup
Baking powder - 1tsp
Baking soda - 1/2 tsp
Cinnamon powder - 1/2 tsp
Nutmeg powder - 1/4 tsp
Clove powder - 1/4 tsp
Salt - A pinch
Butter - 1 cup
Sugar - 1 cup
Egg - 3 (large)
Vanilla essence - 1.5 tsp

Preheat oven to 350 degree F. Grease two 6 inch pans with butter and line it with parchment paper.
Sift flour, baking powder, baking soda and salt. Add cinnamon powder, nutmeg powder and clove powder to it and combine well.

In a bowl, beat butter and sugar until it reaches a sand like consistency.

Then add eggs one by one. Add each egg only after the previous one is combined well.


Now add vanilla essence and combine well.
Then add half portion of flour to it and fold it and then add half portion of caramelized sugar. After that add remaining flour mixture , followed by adding remaining sugar caramel.

After mixing it, add the soaked dry fruits and nuts to it. Don't forget to take the soaked fruits from refrigerator, before a couple of hours, in prior to start preparing the cake.


Fold the soaked fruits well into the cake mixture.
Cake batter is ready. Now we can bake it😌
Pour the batter into prepared pans and bake it for 40-45 minutes.
Plum cake is ready😋
